There's not much to say... Chef Igino is the backbone of the prosciutto shop! Friendly, kind, and honest! The ham melts in your mouth as soon as you bite into it, making you feel like Beethoven's symphony. The first courses are classic Roman dishes, with homemade pasta handmade by the chef. Quick service and excellent value. He recommends spectacular desserts, such as the delicious tiramisu and the famous "Pesche" (Peaches), but he doesn't make those himself, but he kindly invites you to try them. The coffee is truly fantastic; he uses a historic Piuccio blend.

A small restaurant in a perfect location, next to Priverno's main square. The quality of the dishes is impeccable, and the chef is alone, so he does everything inside the restaurant. The service is a bit spartan and brusque, but perhaps that's a characteristic of the place. Don't order coffee because it's made with pods; it's better to sit outside at a café. I strongly recommend making a reservation before going, luckily we went early, because they have a very limited opening window.
If you're sensitive to air conditioning, choose the tables to the right, under the TV.
The main courses are delicious, and the tiramisu is also excellent, especially since, I think, it's the only dessert.

I'm not giving it a fifth star because of the owner's rude manners!
We had lunch at this restaurant, just steps from the main square in Priverno.
Both indoor and outdoor tables are air-conditioned (but hurry up and close the door, otherwise you'll be told that electricity costs!)
The 24-month-old black pig ham and cheeses are excellent.
The pappardelle with white Chianina ragù is also good.
The prices are moderately high for what you get.
Very fast service.
Handmade pasta, with the option of mixing it with various sauces.

A truly unique little trattoria, the idea for which, according to the owner, was born 10 years ago from his passion for cooking. Unique because the place seats just a few people and the owner makes everything (absolutely everything!) himself, which means you might need to be a little patient at times. In any case, he also masterfully makes all types of pasta himself (fettuccine, gnocchi, and even rigatoni, etc.): we had fettuccine with local sausage ragù and rigatoni alla gricia, which were truly the best we've ever had. For appetizers, we chose a local platter featuring the ham that gives the place its name. The prices are more than reasonable, typical of a small town trattoria. The menu isn't extensive, but it's more than enough to choose from, and above all, you can tell that quality is the number one priority for the manager-chef-waiter of this little place. The restaurant is small, seating a dozen people outside on the main street near the square with the beautiful town hall, and perhaps a few more inside. The kitchen is open, and it's clear it's designed almost like a home-cooked meal. Furthermore, the owner clearly has good relations with the entire town and, if he has a minute, is even willing to stop for a convivial chat. Be careful to stick to the opening hours and, above all, to book: he's made a choice not to sacrifice his life for work, so if he doesn't know in advance whether he'll have guests, he might decide to close early and devote himself to his family. We loved it, we recommend it, and we'll definitely be back.

I had a fantastic experience at this restaurant when I visited Priverno last summer. My girlfriend said that the carbonara pasta that she had here was the best that she tried in all of Italy, and I very much enjoyed the prosciutto included in our antipasto.

We came in for a quick lunch whilst walking the Via Francigena del Sud, and we are so glad we did! Fantastic, homemade pasta, cooked perfectly. I had papardelle con gricia and my wife had pasta all'amatriciana. Absolutely delicious!
