La Lampara In Genova

We were traveling in Genoa and ate there twice in four days. Very good, friendly, and quick. If you want to eat out, remember to make a reservation.

The real star here isn't the toppings, but the dough. You can tell there's a lot of thought behind it: leavening for at least 48 hours, which translates into an almost ethereal lightness. The crust is high and airy (what experts call "a dinghy"), but with a crispy edge that avoids the "bubblegum" effect. Finishing the pizza doesn't leave you with that heavy feeling that forces you to drink two liters of water overnight.

The pizza is good, as is the onion farinata. Service is quite slow. There's no ventilation, so you leave the kitchen smelly.
