Our room was beautiful, the window was a picture, the staff was incredibly kind. The food was simply delicious.

We celebrated our wedding anniversary. Bursch continues to be a magical and timeless place, with excellent service, staff, facilities, and a restaurant that, with Erika's help, has deservedly earned a Michelin star.

Once upon a time, there was a valley, with its beech forests and green granite quarries, populated by skilled stonemasons whose skills had to be sold beyond the Alps to escape the poverty of their harsh land. The valley, the forests, and the granite are still there, perhaps fewer stonemasons, but there's no escape from the hamlets of Bursch anymore. In fact, strangers seem to arrive from everywhere, because another stranger has chosen these slopes of beech and stone to share her skills with the world: the carving of flavors, the excavation of aromas, the interlocking of textures, the balance between a pantry called Mother Earth and a space voyage reserved for those who, when Erika asks, "Do you trust me?", cannot help but accept.
A cup of Sichuan peppercorn vegetable broth paired with whipped mountain butter flavored with chamomile on crusty homemade bread accompanies us to the first course: Crin (BBQ pork, caramelized peanuts, milk foam, preserved kiwi), a play of textures and intertwined references that I don't know where in my memory to fish, perhaps an unexplored area between breakfast and lunch? The engines have fired up, the rocket begins to vibrate.
Cacio e pino (Mancini pasta, cacio e pepe, spruce, fermented lemon). I'm confused. But when the preserved lemon meets the balsamic drops of the conifer, everything becomes clear, and evident. I'm happy. A flame flashes and the spaceship begins to lift off.
Viaggiatore (BBQ pigeon, green apple, cotton candy, rose-flavored radicchio). We're entering the stratosphere, the point of maximum structural vibration in the journey to the stars. What is this intruder? A cloud of cotton candy on the table? The meat of the bird, the radicchio cooked in rose water, the spheres of green apple... what is missing on the palate to reach equilibrium, to avoid the risk of our upward journey being interrupted and coming back down? Of course, the cotton candy I have here, in front of my plate. We're in the exosphere, the absence of gravity is beginning.
Running through the hazelnut groves of the Langhe (Hazelnut and quince cake). The world seen from above is beautiful: look down there, the Alps! And you can see the small, narrow Cervo Valley, and a little further down the Langhe, and perhaps that town is Cherasco, surrounded by the hazelnut groves of which Piedmont is so proud. And if you arm yourself with a powerful telescope and peer between the rows this season, you might just spot two little girls chasing each other joyfully, kicking up dry leaves and Cuneo earth. I'd never seen that before, until today.

A gift from one of my sons and his girlfriend for my birthday: dinner, bed, and breakfast with my wife.

My partner and I stayed at this hotel in November 2025 and we were delighted! Everything was perfect, not a single flaw! The service was impeccable, breakfast and dinner were truly delicious, and the room was clean and beautiful, just like in the pictures. The interior of the building is a veritable museum. So we stayed for a night over the weekend with our dog and newborn in tow. Enchanting place. Masterful staff (thanks to Davide, the dining room manager, and Roberto). Food of indescribable quality. Billiards, live music available, and games in a bucolic setting. A nice touch is the covered terrace with sofas. All this in a setting straight out of a Rembrandt painting. 100% worth the trip.
