Everything is superb. I have a weakness for raw and cured local fish. I find a skill and passion in these dishes that perhaps surpasses that of the cooked ones, even though they are excellently made. I was truly impressed by the quality and attention to detail. We chose the 8-course raw fish tasting menu, but were delighted to be served multiple samples, all prepared with the freshest, highest-quality fish.
The fish cold cuts served as appetizers were a delightful discovery: original, delicate, and rich in flavor. Each subsequent course confirmed the caliber of the cuisine, capable of surprising without ever losing sight of the raw ingredients.
The service is impeccable: attentive, kind, and always available, capable of making the experience even more enjoyable.
A restaurant that combines sophistication, creativity, and a genuine passion for the sea.
Highly recommended for seafood lovers looking for a truly special dinner.

A friend who follows him on social media introduced me to it. I was immediately intrigued by their fish cured meats. The place is easy to get to and has convenient parking. Simply but tastefully decorated, it's beautiful when you walk in, with the open kitchen and refrigerators hanging with fish cured meats—swordfish, tuna, amberjack, and more.
We ordered tuna bresaola, belly prosciutto, tuna coppiette, seafood tripe, and porchettato (amberjack). Everything was exceptional, but the belly prosciutto and the tripe were sublime!
We continued with three first courses: fusilli with squid ink and raw ham, spaghetti with black garlic, citrus fruits, and leccia salami, and amatriciana with tuna guanciale. All truly delicious, delicate, and bold in flavor. After all that, the fish soup with 15 types of fish arrived (you have to order it at least the day before). All the cleaned fish and shellfish were delicious, served with the inevitable toasted bread. We were so moved!!!!
Finally, the desserts were few but well-made: delicate and not cloying tiramisu, vanilla mousse with puff pastry and Nutella (a much tastier version of the sbiciolata), and a homemade magnium, which was amazing.
To finish, the bitters—you won't find the conventional ones, but something more sophisticated. We had agave America, a gentian from the Aosta Valley, and a cent'erbe. Everything was top-notch.
I'll definitely be back to try more...thanks for the great experience.

We ordered three tasting menus, complemented with excellent oysters (one round was offered). The quality of the ingredients was exceptional. The raw fish was excellent, with a special mention for the dry-aged fish and the seafood cured meats (ventresca and bottarga were divine), but the first and second courses were equally outstanding. Very friendly and professional service. Excellent value for money. We'll definitely be back.

I wasn't familiar with this place. It's a beautiful place, excellent location, far from the city and definitely less chaotic than usual. But their specialty is the menu, truly good with an amazing mix of flavors. Between the appetizer, the main course, and the side dish, I don't know what was better. Highly recommended, the waiter was also very polite and courteous. Top! 👌

The choice and idea of opening a restaurant focusing on dry-aged raw fish and seafood cured meats is commendable.
We found the raw fish very good, but the cured meats were certainly more interesting. The tuna salami was excellent, as was the amberjack mortadella. The swordfish pairings were superb.
The only negative is the wine list, which could be expanded a bit.
The location is definitely a real Achilles heel: far from everything and certainly not very elegant, overlooking a main road. Just as they showed courage in the menu, perhaps they needed to be equally courageous in choosing a better location.

The waiter smokes IQos while carrying the dishes, and even threw one dish onto the table. Terrible service, and the wait for the food was even worse. The appetizers were excellent, but then gradually faded into the first and second courses. Tasting menu €90.

Everything was exceptional, right from the welcome. Each dish showcases the finest ingredients. There's a wide selection of wines and sparkling wines, and finally, exquisite desserts. Thank you for the excellent dinner.
