With the occasion of our anniversary on February 3rd we decided to celebrate in the restaurant on the go. Very refined and elegant place, refined and refined furnishings!
Nothing is left to chance, table, chairs, cutlery and glasses! Very professional and kind dining room staff. The best thing, which is not always found in starred restaurants, is that chef Melis himself presents and serves the dishes. Great lover of cuisine and always looking for new challenges and dishes. It uses the highest quality ingredients and raw materials, dedicating a unique and rare research to finding them! Exquisite dishes that take you on a true journey of tastes and flavours, even in Sardinia, the region from which the chef comes. The raw materials, even humble ones, are selected with great care and are processed and enhanced in such a way that the result leaves you speechless! Particular note for the creamed risotto with pumpkin, mandarin, coffee and Alpine trout, as well as for Alfredo's eel and suckling pig! Con l’occasione del nostro anniversario il 3 febbraio abbiamo deciso di festeggiare nel ristorante in viaggio. Locale molto raffinato ed elegante, arredamento curato e ricercato! Nulla è lasciato al caso, tavolo, sedie, posateria e bicchieri! Personale di sala molto professionale e gentile. La cosa più bella, che nei ristoranti stelllati non sempre si trova, è che a presentare e servire i piatti è lo stesso chef Melis. Grande cultore della cucina e sempre alla ricerca di nuove sfide e piatti. Utilizza incredienti e materie prime di altissima qualità, dedicando una ricerca più unica che rara nel reperirle! Piatti squisiti che ti portano a compiere un vero viaggio di gusti e sapori, anche in terra sarda, regione da cui proviene lo chef. Le materie prime, anche umili, vengono selezionate con grande cura e vengono lavorate e valorizzate in tal modo che il risultato ti lascia senza parole! Particolare nota per il risotto mantecato con la zucca, mandarino, caffè e trota alpina, nonchè per l’anguilla e il maialino di Alfredo! Per l’occorrenza lo chef ha improvvisato anche una piccola tortina omaggiandola! Grazie a Chef come Melis con la sua continua ricerca la cucina non smette mai di stupire! Torneremo sicuramente a trovarvi, a presto!

What a trip...the evening with Claudio Melis was truly a dream! The journey starts right from the start and you always feel great and in great hands! The evening started with a soup to warm up and before we had chosen the number of courses, greetings came from the kitchen! The service was great and the advice on the wine was excellent! It was great that Claudio himself brought the food to the table and was always able to say something about the composition and the reason for the dish! We were thrilled all evening long! We can only recommend it and will definitely come back.

It was infinitely wonderful to travel among the flavors of the cuisine of the great Chef Claudio Melis. The dishes, a synthesis of culture, experience, professionalism and passion, together with the detailed and compelling explanations of the very friendly and knowledgeable sommelier, are a true masterpiece of taste and enrichment not only on a gastronomic but also cultural level. A good and enriching experience which, like all trips, leaves you with wealth, good memories and the desire to share the positive energy left behind. Have a good trip!

Dinner at in viaggio is an experience. It's a small intimate resto with 5 tables in a very dark setting that provides for a tasting menu. The dishes are served by the chef himself and a quite creative. The wine pairing was top notch though I wished there were more local wines included. As for the food, though all of elements seemed interesting I felt that the flavors were quite subdued . Personally I wished they packed more flavor punch. The service was patient and friendly from the 2 team members I met.

Well, what can I say, I've never felt so pampered! The professionalism of the staff by Chef Melis will leave you speechless!
I went to other Michelin stars, but I must say that here they really made us feel "on a journey".
The dishes, as well as being aesthetically wonderful, left a superlative taste on the palate.
The chef came out at every course telling his dish... well, what can I say... heartfelt congratulations to ALL the staff and one day I will definitely come back for a little trip...

Nachdem wir das etwas versteckt gelegene Restaurant gefunden hatten (in der Zufahrt zum Hotel Luna Mondschein links gelegen) waren wir schon sehr angenehm angetan von der äußerst freundlichen Begrüßung. Das Restaurant selbst ist klein, strahlt eine ruhige und elegante Atmosphäre aus und hat Platz für vielleicht maximal 20 Gäste. Elegant und äußerst fein ist sich ganze Menü über den Abend hin, es war Service auch kein Problem, dass meine Frau nur fünf Gänge und ich sieben Gänge wollten. Zu Begrüßung gab es, was leider nicht mehr selbstverständlich ist, warme Handtücher. Dann folgte, so beschrieb es der äußerst freundliche und kenntnisreiche Maitre, einen Mund- und Geschmacksöffner auf Basis eines nach Sellerie schmeckenden Fonds. Danach hoben uns die Amuse gueules in eine andere Welt, durch die wir den ganzen Abend in höchsten Aromensphären reisten. Zum Beispiel gab es zu Beginn eine marinierte spaghettiartig geschnittene rohe Kartoffel mit Eigelb. Es gab keine spektakulären Zutaten wie Trüffel, Kaviar o.ä., mit denen sonst geprahlt wird, sondern bodenständige Zutaten allerbester Qualität, deren Geschmack so herausragend ausgearbeitet wurde wie man es nur äußerst selten erlebt. Ein Clou ist auch die Weinbegleitung, die bei allen Gängen tatsächlich im Mund zusammen mit den Speisen noch einmal zusätzliche Aromenblitze erzeugten. Alleine für sich waren die Weine gut, unspektakulär aber im Mund mit dem Essen zusammen eine Wucht.
Der Chef Claudio Melis servierte und erklärte selbst die einzelnen Gänge, der Maitre ergänzte dieses und schwärmte dann äußerst kenntnisreich über die Weine.
Summa summarum: Ein Gewinn für Südtirol, wir freuen uns schon auf das nächste Mal.

Few, very few seats, intimate. Not too elegant entrance. Well presented dishes, classic flavors and combinations. Service with some slips, easily improved.

My first Michelin star restaurant. Wow it was a great experience. The food of course was amazing but what made In Vaggio stand out the most was the service, it was first class. My wife and I had the 7 course chef tasting with wine pairing but with all the extra courses, we probably had 10+ courses! The Chef was very generous. He personally explained all the delicious courses and our waiter provided excellent wine pairings. The Chef even came out to say bye and thank you for having dinner there. It was an amazing meal only made better by the personal touches. This is a very small restaurant with only 5 tables so you will definitely need reservations. If you happen to be in Bolzano, I definitely would recommend this experience.

I recently had the pleasure of dining at this Michelin-starred restaurant , and I must say, it was a remarkable experience. The talented chef curated a 9-course vegetarian meal that was not only creative but also made excellent use of local ingredients.
Each course was a work of art, showcasing the flavors of Sudtyrol in a delightful way. From the first bite to the last, I was impressed by the chef's ingenuity in crafting dishes that celebrated vegetables in all their glory. The use of local produce added a unique and authentic touch to each plate.
The atmosphere of the restaurant was simply enchanting. It created the perfect ambiance for an unforgettable dining experience. The staff were attentive, knowledgeable, and passionate about the cuisine, which added to the overall enjoyment of the evening.
In conclusion, my visit to this Michelin-starred restaurant in Bozen was an extraordinary culinary journey. For anyone seeking a top-notch dining experience with a focus on local ingredients and creativity, this restaurant is an absolute must-visit.
