18/03/2026: Located outside the center of Conversano, the restaurant consists of a small, well-lit, warmer, and more welcoming interior room, and a second, decidedly more sparse and impersonal room created from a small atrium covered by a canopy and heated by large outdoor heaters.
I'll skip over the nearly two-hour wait, justified (as always) by the fact that it was Saturday night (in reality, the real reason is that they increasingly prefer to focus on takeout, so seated customers can wait...).
To pass the time, we ordered some tempura vegetables, which turned out to be too oily, too colorful, and obviously reheated.
We reached the pinnacle with the pizza.
Some ingredients, meanwhile, had run out, and we had to change our order.
My pizza, a simple "bufalina," had only a lot of tomato and a thin layer of finely shredded mozzarella, as if it had been blended. Practically tasteless.
There wasn't even a hint of buffalo mozzarella (the flavor of which I can recognize very well, when it's there...).
We didn't complain because we were guests, but we really could have left everything on our plates.
I'm giving three stars only to encourage the pizza chefs, all very young.
But the restaurant, the real, simple, and authentic kind (which doesn't take much to offer), is something else entirely.
11/10/2025: One of the best pizzerias in the area, highly recommended by my family.
