17/04/2025: Pizzeria tested: “Pizza Express Number One”
Pizza tasted: Margherita with buffalo mozzarella DOP, long-leavening dough (72h), wood-fired
As soon as it is served, the pizza has a high, well-alveolated crust, a sign of controlled leavening and generous hydration. The color is golden, with light browning from a wood oven: a perfect tan, worthy of a trade magazine.
At the first cut, the blade slides without resistance: crunchy underneath, but soft inside, like a caress between two extremes.
The scent of buffalo mozzarella is released immediately, with fresh lactic notes and a vaguely herbaceous finish, a sign of authenticity. The tomato? San Marzano, sweet and slightly acidic, well balanced, not intrusive.
In the mouth, the mixture melts elegantly: a slightly nutty aftertaste, due to the expert cooking. Chewing is harmonious, rhythmic, almost musical.

05/02/2025: I ordered a gluten-free pizza on Just Eat. It arrived home quickly and was really very good. I will definitely order again!
