For example, on the menu I found a dish that my grandmother used to make for me and that I had completely removed, namely the stuffed neck. In fact, I really liked this feature of not necessarily serving the usual Livorno dishes that are more fashionable, such as cacciucco, and of preferring those dishes that were part of the culture of the past and which have now disappeared a bit.
