Personally I find that Erbaluigia is the best place to live a stand-out experience in the heart of Pisa. Tatiana's cuisine manifests itself in continuous research, intertwining with tradition in a respectful and conscious way: there is knowledge of the Tuscan culinary culture, you see it, you hear it and you appreciate it. I think of the pigeon in four acts, of tripe and pasta with oil and parmesan, but also of desserts: there is always room for those. Yet every season the menu evolves, adapting to seasonality, always offering something innovative, without ever disappointing. Whether it's a Sunday lunch with loved ones or dinner for an occasion, Fabio and all the staff are always ready to welcome, knowing how to recommend the most suitable wines and serving with great rigor. A convivial, elegant and -finally- different experience.

The menu is very interesting, every single dish inspires and intrigues. The cuisine is excellent, the dishes find a good balance between many flavours. It's a restaurant that makes you want to come back and try what you didn't choose. The value for money is excellent. The environment is cozy and cared for in terms of soundproofing, even if it gives a somewhat bare feeling

So much potential. The ideas are all there, the execution needs to improve. On some dishes you can see the research, the study... then the last quid is missing which transforms the 7 into a 9. The oyster entitled with mignonette sauce and truffle I think (named after one of their customers who always had it) for example... nice idea, beautiful presentation, delicious sauce... but it covers the unpleasantness which isn't even noticeable in the aftertaste. Dishes in general very good for goodness sake... but you can do more!💪🏻 More or less the same thing, even if more successful, on the 'Due passi in vigna' dessert: a wonderful idea but let me feel the mushroom powder more, it's the one the particularity. I'm not saying it has to be the dominant flavor but it doesn't have to be completely covered either. Nothing to say about the service and also about the wine list which proves to be 'tasty', congratulations.

The overall experience was fine.
I’ll start with the positives:
• The atmosphere was nice; the lighting, paintings, and music were all good.
• The lamb tartare was superb, both in the quality of the meat and the spices they used.
• They have a nice selection of wines.
• The taste of most courses was quite balanced, but…
Time for the negatives:
• The codfish was terribly salty. I wasn’t able to eat even a third of it.
• We received the menu only around 10 minutes after being seated, and it took another 20+ minutes to take our order after that. It’s true that the place was quite crowded, but it was still unpleasant to be ignored like that.
And a neutral point:
• Most of what we ate was incredibly similar to what our Eastern European grandmas were cooking (maybe that’s the influence of one of the owners, who has an Eastern European name). Except for the codfish, the food was quite nice, just not what I was expecting. So neither good nor bad.
