A huge thank you to all the staff, Gianni always polite and very kind (I adore you), Vito, what can I say you are unique and special, you make us feel at home, every time leaving this place is a tragedy for me 😅 A thank you also to your students, very good and with a great desire to work. Everyone always with a smile, excellent food, mamma mia, how good the tortelli stuffed with swordfish!!! Not to mention the fried foods, the mussels and the desserts!!! I wish you a good summer!!! We stayed at the estate and in the evening we chose to have dinner at the Don Carmelo restaurant. At first glance the kitsch decor catches the eye, but then it fits. Everything revolves around the figure of Al Bano, including music, and everything seems stuck in the 80s. The important thing is to understand what this represents and who it represents and is actually in line. 😊 The food: we took a platter of cheeses and cured meats and they were good as was the grilled potato dish. We drank a Plato which we appreciated well. In the dining room, the young staff are a bit inexperienced, but among them stands out a man who was very pleasant without being intrusive or excessive with whom we chatted for a bit. They have gluten free options, but not for dessert, but suddenly a surprise, ice cream with black cherries...I really appreciated it. This indicates that sometimes it doesn't take much to please everyone. Thank you! It was an experience I would do again.

We stopped for lunch in this place driven mostly by curiosity, having found conflicting reviews...restaurant above expectations, ate (and drank!!) DIVINELY, generous portions, attentive and attentive service. A special thank you goes to VITO, the soul of the restaurant, attentive and thoughtful like few others, and to ANNAMARIA, a superb and very kind cook! I highly recommend!

Lunch on May 1st with my wife and daughter. The restaurant is quite rustic and given that it is immersed in the countryside, a few more mosquito nets wouldn't hurt, given that there were a few too many insects. However, lunch started off well, tasting excellent veal meatballs with a nice sauce, washed down with a good bottle of Felicità white wine. The problem came with the seconds. Overcooked entrecot and stringy meat plus a wasp that landed on it. Fried fish badly breaded and worse cooked. The bill could have been adequate if the dishes were cooked well, but this was not the case. In short, the cuisine needs to be revised and the service needs to be improved. I don't think we will be back.

Ultimo giorno di una bella vacanza nel Salento con moglie. Da Lecce decido di fare una escursione nella vicina Cellino S. Marco, e visitare di conseguenza le tenute Carrisi (spettacolare location) A pranzo da Don Carmelo, il ristorante intitolato al papà di Albano. Non avevo grandi aspettative ma devo riconoscere che ho avuto la sorpresa di scoprire un ristorante gourmet, con qualcosa in più: la genuinità delle materie prime e le porzioni non microscopiche. Il servizio di sala eccellente, con l’ottimo Vito che ci ha fatto da Cicerone nella visita del locale e poi ben consigliato nella scelta dei piatti: baccalà fritto con cuori di carciofi e polpettine al sugo per antipasto. Maritato alla salentina e soprattutto il tortellaccio al nero di seppia, cuore di pescespada con datterino giallo, davvero sublime. Il tutto è stato accompagnato da un bianco che per fortuna poco prima avevamo provveduto ad acquistare in enoteca: Il “Don Carmelo” chardonnay 100% fresco al palato e con caratteristici odori fruttati. La migliore sorpresa gastronomica di questa vacanza pugliese+++++

Locale che ben esprime l'essenza e lo spirito della Puglia, i suoi profumi e suoni, immerso nella natura. Ottimo cibo accompagnato da vini, olio e grappa di qualità. Assolutamente consigliato a tutti.

I recently had the pleasure of having dinner with friends at the Don Carmelo restaurant at Tenuta di Al Bano Carrisi and I must say that it was a memorable gastronomic experience. First of all, a big applause to the chef Annamaria, whose culinary talent made each dish a masterpiece of flavours. The atmosphere of the restaurant is welcoming and the staff were extremely courteous and helpful, adding a positive touch to the whole experience. I also noticed a particular attention to the freshness of the ingredients, which were definitely evident in the dishes we tasted. I would highly recommend Don Carmelo to anyone wanting a high quality dining experience. I can't wait to return to try other delights on the menu! Thanks to Annamaria and the team for an extraordinary evening.

18/06/2025: Friday night, fortunately not a very crowded place. Decent appetizers. We ask for a catch of the day for two people. The cooking method is not specified (also our fault for not having asked) which we later discover is in sea water (only after complaining about the excessive saltiness). The level of saltiness exceeded the tolerable level, declared to the waiter who answers us angrily saying that it is normal for it to be salty. We insist explaining that yes it is normal for it to be, but not to those levels. The waiter offers us alternatives and we choose a grilled swordfish that was a bit overcooked. On the bill we find both the very salty sea bass, of which we ate just the little piece that ruined our palate, and the swordfish (which in any other restaurant they would have offered). There is definitely room for improvement
03/06/2025: Friendly staff available for any need, from requesting dishes off the menu, to feeling at ease. We had a super creamy and tasty spaghetti with mussels 😍😍 I would go back.
