We went to this restaurant at the beginning of August, on a midweek evening.
The place is well-kept and very beautiful, you can see it right from the entrance. We were greeted by the waiters and Mr. Santini. They stood out for their friendliness, kindness and availability, never intrusive or affected, never cloying or excessively, nor rude or forgotten.
We chose a "Fisherman's Menu" tasting menu, challenging to get to the end (for those who tolerate small portions) and each dish was a discovery of perfection and flavours. Everything balanced, authentic flavours, nothing to complain about.
Worthy of mention in the long menu are the lobster terrine with caviar, a superb foie gras with raisin wine sauce and the inevitable traditional tortelli: pumpkin tortelli (they look like grandma's. A starred grandma) delicious and also appreciated by guests who usually don't eat them due to the presence of mustard and amaretti.
The service has always been perfect, never excessive, never forgotten (even though the room was full), never felt uncomfortable, the explanations of the dishes were exhaustive, friendly waiters ready for dialogue, always attentive to the needs of the table, but discreet. We also lingered under the portico overlooking the internal garden, refreshed by a waterfall from the roof which gave a particular background to the place.
We really enjoyed our stay in this place which has maintained its three stars for a long time and is worth it. Congratulations and thanks for a wonderful evening.

The TOP!!! impeccable service. Guys super prepared on everything. Very good food. They also accepted my dog who fortunately was good. I praised the risotto but the tomato terrine perhaps surpasses it. And thanks again so much because since the next day is my birthday they celebrated me super!!!!

Mia moglie ed io abbiamo deciso di celebrare il nostro anniversario in questo ristorante stellato, dove desideravamo andare da tempo. Devo dire che il ristorante è molto bello, elegante e raffinato, e il servizio è molto attento e altamente qualificato. Tuttavia, personalmente ho trovato il servizio un po' troppo opprimente in alcuni momenti. Il cibo era buono e le materie prime erano di qualità, ma non c'era nulla di eccezionale che mi abbia lasciato senza parole. La degustazione di formaggi è stata piuttosto deludente, con solo tre piccoli pezzi di formaggio e un comunissimo 24 mesi. Alcuni abbinamenti nei piatti non li ho capiti sinceramente. Credo che per quello che abbiamo speso e per il cibo che abbiamo mangiato, non ne valga la pena. Sono stato in ristoranti non stellati dove ho speso molto meno e ho mangiato molto meglio. Inoltre, il ricarico sui vini era un po' eccessivo.

I waited for a few weeks before writing this review, because when you go to a starred restaurant for the first time, then with experience and the search for wonder and the new you inexorably judge why it is right to ask yourself and the doubt as to why go there knowing that you definitely don't pay for what you eat, but for the search for unique sensations and now at my tender age of sixty some satisfaction is offered there every now and then.
Santini is my second three star, but I usually go to two and one stars.
Let's start from the location which is unquestionably top notch, as is the family's welcome (a little too lavish and emphasized by the assistants).
Excellent wine list, although personally when you get past so many excellent wines I would order them digitally otherwise you risk spending a lot of time reading the whole book.
While, a little disappointed by the content of the food. I don't question the quality (even if the eel was a little fatty and the breading a little hard on the teeth) of the ingredients, but the taste, unfortunately, too anonymous, concisely, I never exclaimed a "whaw" on no dish, except for the foie gras I have never tasted in the way they cooked it... (according to them, a dish that will disappear due to criticism of how it is obtained).
I will repeat myself endlessly, but the most excellent thing is the welcome and courtesy that make you feel at "home" even if you are in a three-star hotel.
An experience that needed to be had, and certainly deserves it, it's a shame that I wasn't fully satisfied.
Well, as a famous saying goes: “de gustibus, non..”

Ci rechiamo in questo ristorante, per il mio compleanno, con mia moglie, appena prima di Natale.
Già da fuori si capisce che la location è curata e di livello, infatti la sala, raccolta, dove pranzeremo, ha splendide vetrate a vista sul verde esterno che consentono, oltre al tepore decembrino, si far entrare molta luce (se desse fastidio, ci son ovviamente le tende).
Scegliamo il canonico menu del pescatore: è evidente l’attaccamento a questa terra, incastonata tra la Lombardia, l’Emilia e il Veneto con proposte che abbracciano la tradizione rurale, fluviale e anche, probabilmente, appenninica.
Di tutti i piatti assaggiati, si ricorda con grande piacere (a mesi di distanza) la terrina di astice e i tortelli di zucca (come ti sbagli, di una semplicità, e per questo, di una bontà infinita).
Menzione di onore al servizio, si è accompagnati da una educazione, da una conoscenza della materia prima e da una disponibilità che si fa fatica a riscontrare altrove.
Si vede che è rimasto un posto ancorato alla tradizione di famiglia (i Santini sono anni che portano avanti questa mission).
Consigliato, ci torneremo per provare le prelibatezze della stagione calda.
Il conto è commisurato a quanto si vive come esperienza e degusta come palato.
Scegliendo il menu, si può benissimo immaginare quanto si andrà a spendere.

Located in a rural town about an hour by train from Parma city center and about 5 minutes by taxi from the nearest station, this restaurant has been a leader in the Italian cuisine world for many years and is respected by star chefs around the world.
No matter when I visit, the food, tableware, service, and space are all sophisticated, and I definitely recommend it among all the ristorantes in Italy.
Although this store is difficult to access for tourists, it is well worth it.
Foie gras with passion fruit sauce is a must try.

In Canneto sull'Oglio stands this restaurant which years ago was born as a simple trattoria for a business lunch. Today the Santini family has managed to transform this place into an ultra-luxury and welcoming home like staying with family. The Santinis give more than the best to spoil, pamper the customer, in fact the service, the wines at the location deserve a 10 rating, no imperfections, let alone the kitchen where the three-starred chef Nadia manages the kitchen team with decisive elegance and precision, taste and dishes like an artist also thanks to his experience trips made in France. Outside the restaurant there is a vegetable garden that Nadia takes care of with passion and love. To taste once in your life the tortelli, the eel, the risotto and above all the foie gras.
