I visited Pizzeria Cortenova in Frattamaggiore, and I must say the experience exceeded my expectations. As soon as I sat down, I ordered the Genovese-style pasta frittatina as an extra, intrigued by the reviews: it was a perfect choice. Crispy to the bite, creamy inside, and with that typical Genovese aroma that captivates you even before you taste it. One of those things you'd order again without thinking twice. I then continued with the Cortenova appetizer, truly well-made and with attention to detail. The parmigiana was soft, balanced, and flavorful to perfection; the broccoli rabe had that perfect bitter note that only those who truly know how to cook them can maintain; the fried foods were dry, golden, and very tasty. You can see the attention to detail in the choice of ingredients and preparation. For pizza, I chose a Margherita, because when a place does Margherita well, it means they do everything well. The dough was light and perfectly cooked, with perfect leavening, while the tomato and mozzarella were top-quality. A simple pizza, but truly made as it should be. The experience was rounded off by the very friendly and helpful service, which immediately made you feel at ease without being intrusive. Overall, Cortenova is a pizzeria that combines quality, care, and a warm welcome: definitely a place to return to and one I would recommend without hesitation.
