Baccaleria was a pleasant discovery. The place is basically a wooden veranda. But the dishes, all fish-based and all cooked very well, make you believe you are in a kiosk by the sea, not on the outskirts of a shopping center. The service was quite fast, but not immediate. And this is also a good sign, because it means that the food is prepared on the spot and there are few frozen things. You absolutely have to try the fried cod (maybe with a salad, rather than with potatoes). I have never eaten better cod. And then perfectly clean (without bones and skin). To have more (3 pieces were not enough for me) I also had it fried with anchovies, to which I also added calamari, just to make sure I didn't miss anything. I would have had seconds of calamari too, but the anchovies had a rather heavy breading, of egg and breadcrumbs, which prevented me from doing so. If the anchovies had been just floured, they would have been perfect too.. to conclude this fish-based lunch (pity they are not open in the evening).. I took a sandwich with octopus tentacles, burrata, chopped pistachios and, instead of guacamole, green sauce.. which is one of my favorite sauces and I would have liked more of it.. anyway, the octopus was very tender, the best I have eaten.. the cook, Sofia, is young, but has grit and character to sell.. and I am sure that she will make people talk about herself in the kitchen, if these are the premises..

DO NOT MISS HER SPECTACULAR SEAFOOD.
We stumbled upon this restaurant completely by accident after spending a few hours at Valdichiana village outlet mall.
It is a very small casual restaurant with only two employees, the server and front end person and the fantastic cook in the back.
I am the first person to admit to having a little less patience than I should and when we arrived four other groups had come in before us. I did not really understand why the front end person was ignoring us and slowly dealing with the other groups that preceded us. It seemed that he could have taken our order on multiple occasions but took his time and cleaned other tables and did other things while we waited for any semblance of service.
However I was completely unaware that there were just two of them, and had he taken our order sooner it would have just sat in the back while the fantastic female chef cooked other people's meals one at a time.
I will say that getting drinks to us sooner would have created a better impression and I think it could have been accommodated.
There were no menus only a poster on the wall showing the dozen or so items at very modest prices. My wife and I both had the baked fish and we ordered one side of fried vegetables.
One of the interesting things on the menu that we unfortunately skipped was an octopus sandwich. A young man sitting adjacent to us ordered it and later told us it was tender and spectacular. We will not miss it on our next visit which will be soon.
The final ironic twist for my review is that my wife and I were eating at a Michelin restaurant two days later and started up a conversation with the elegant woman beside us. The conversation turned to the best places to eat in the area and we were in Sarteano about a half an hour away.
I asked her if she ever went to Valdichiana Village and she dismissed me which I assume meant that she did not typically buy her clothes at an outlet mall. But just moments later she said "there is the best seafood restaurant near there", describing this place in great detail.

Personale accogliente e molto simpatico. Menù a base di baccalà e pesce in genere, piatti deliziosi, cucinati con dedizione da sapienti mani. Non abbiate fretta, qui ne vale la pena aspettare..
