More than the pizza (which is worth a 10 in terms of dough), here it is the experience that makes the difference! Gianni wakes up at dawn and prepares only a certain amount of white bases to fill with what he has. Seeing him at work leaves you with a good sense of things from the past. If you unfortunately arrive after 1pm you risk waiting in line and leaving empty-handed. But if you are among the lucky ones, maybe you can taste the special made up of mayo, rocket, tomato and surimi and enjoy, half is enough!

I give it a 5 for trust but unfortunately I arrived at 2pm with closing time at 3pm and it was already all over. I know that's his way of working, he makes that dough every day and when it's finished he closes. I had bad luck, one day I'll go back, unfortunately I live in Livorno so who knows when, but it was strongly recommended to me and I've seen some videos so I can't wait to try it. But next time I'll go in the morning 😄

how wonderful. See the master, the artist Gianni, at work. Arrival on Saturday at 1pm....a crazy queue in front of the entrance, at least 20 people in line...and you already understand which place you are going to try. I waited 45 minutes for my turn, but the wait was worth it. Gianni, from 4 in the morning, prepares the dough, the various toppings and runs the business completely alone, until the day's dough finishes, around 3.00pm. I had the opportunity to try the stuffed aubergines and mozzarella and an iconic surimi, pink sauce, tomato and rocket. Seeing him prepare the pizzas, roll out the dough, bake... it's a spectacle.

Inutile parlarne,dovete andarci!
Una pizza bianca eccezionale,per me la più buona di Roma.
Ripieno di qualità: con broccoli,con polpa di granchio pomodori e rucola,con la frittata di zucchine,con mozzarella e pomodori,con mozzarella e prosciutto crudo,con melanzane e mozzarella.
Unico neo è che da sempre lui è da solo e quindi o fa le pizze o vi serve: scelta commerciale discutibile,ma Gianni lo devi prendere per quello che è.
Prezzo super,qualità eccellente,pizza strasferica e ripieno ben bilanciato.
Davvero da provare e godere..

Da Gianni al Mattone è stata la mia prima tappa di un viaggio culinario partito da Napoli, non potevo chiedere inizio migliore.
La pizza è croccante, quasi che gratta il palato, leggera e con prodotti freschissimi.
Spaziale la pizza con il surimi, vale lo stesso per quella con la frittata di zucchine, buona anche quella con la classica mortazzaz
Questa pizzeria è un’istituzione per l’intera città, fortunato chi può goderne ogni giorno!
