I recently visited the Uni Restaurant in Cervia and, unfortunately, my experience did not live up to expectations. Let's start with the food: although the presentation of the dishes is taken care of down to the smallest detail, what is missing is the quality of the content. The flavors do not justify the exorbitant prices asked at all. The general feeling is that costs are inflated, supported more by the theater of presentation than by true culinary excellence. Presentation, however important, cannot replace the substance of the food. A restaurant of this caliber should offer a complete gastronomic experience, where the aesthetics of the dishes are accompanied by extraordinary flavours. Unfortunately, Uni di Cervia is unable to maintain this balance. The environment also leaves something to be desired. The spaces are poorly managed and the style of the restaurant does not reflect the elegance that the prices of the dishes would suggest. There is a lack of coherence between the attempt to offer a luxury experience and the reality of the physical space and furnishings. In summary, although the intention to offer a refined experience is clear, Ristorante Uni di Cervia fails to meet expectations. Good presentation should be accompanied by high quality food, which unfortunately I did not experience. Considering the offer, the quality-price ratio is unsatisfactory.

Uni Omakase is a beautiful experience, very high quality food, unusual flavors and textures, excellent wines and sake... but it's not just that! The evening was accompanied by simple but profound explanations relating to what we were about to eat, with perfectly timed times, all accompanied by precision and attention to detail. The master and Elena are a perfect match that make dinner a real experience. This evening not only fills your stomach but also your eyes and heart!

Since it was my first time here I opted for a tasting menu, trying different sakes to accompany it from time to time. There's not much to say really.. everything was excellent! Waiters available to explain and re-explain the dishes and to recommend other sakes to drink despite the place being full; I really enjoyed the advice on sake and also discovered new products. The tasting came out without excessive expectations and shows off excellent techniques, products and combinations. I particularly appreciated the sando with monkfish liver (which I love) and prawns, the octopus "yakitori" and the duck gyoza which are spectacular! Overall I would still say everything was good or very good! All in all, the expense was commensurate with the dinner. Experience to be repeated. The only negative aspect after 4 glasses of sake is the lack of air conditioning... but whatever.
