At this restaurant, you'll find both tradition and innovation. The food is excellent, authentic, and high-quality. The staff is courteous and eager to please. The atmosphere is very relaxed and welcoming. The value for money is truly amazing. I've rarely found a restaurant that completely satisfies me. The only downside is a bit of a wait between the appetizer and the main course, but that's quickly forgotten thanks to the quality of the dishes.

I was immediately greeted by friendly waiters who offered us a taste of their own red wine.
They seated us and let us order some amazing dishes.
The tripe and baked fries were very good.
A great experience, worth considering even the short wait.

I really liked the rustic setting surrounded by greenery with many objects from the past. We ate pizza and all four types were excellent, but I must say that they have beautiful dry-aged meat. That will be the next one! For me, a nice 8.5.

Trattoria and pizzeria in the Palestrina countryside. We went there on a Saturday evening, expecting a long wait... but to my surprise, the service was quick and efficient. Good food, good pizza. Excellent bill 😉

I arrived at Casale Pomodoro e Basilico at 7:30 PM on September 29th, the last lights were on, and the good news was immediate: ample, clean, and well-lit parking. Alessio greeted me with a smile, and within minutes the large, tidy dining room filled up. The appetizer was Roman-style tripe and bruschetta: the tripe was a masterclass in balance, incredibly tender, with a carefully prepared sauce, a frame of spices, and just the right amount of pecorino cheese; among the best I've tried. The bruschetta stood out thanks to the perfectly toasted bread, without burning, probably from the oven; the tomatoes, however, weren't at their best: my fault for taking a risk out of season. Side dishes: silky chicory, well-seasoned garlic, and just the right amount of chili pepper; roast potatoes that were adequate, I'd say first fried and then baked: good but not memorable. The grill passed the test: juicy steak, well-seasoned pork, fragrant fennel sausage with a large mince (almost chopped with a knife), and lean arrosticini, cooked precisely and with a clean flavor. Attentive service: hot dishes, served on time even when the dining room was full; generous portions, Electa water at the table. Bill: 10++++++—a "crisis-saving" quality/price ratio: the disproportion clearly favors the customer considering the location and the ingredients. If I really had to mention the margins: potatoes with a little extra pizzazz and tomatoes only in season. Verdict: As a lawyer, I defend it without hesitation; as a teacher, I appreciate its technical consistency; as a gourmet, I'll gladly return, perhaps to re-try that fennel sausage and a second bowl of tripe.
