A little gem in Brindisi: Grano e Uva
If you're looking for the usual thin, "sad" pizza, you're in the wrong place. At Grano e Uva, pizza is an experience that reconnects you with the world.
Why you should go:
The dough is the real star: Nuvola, light, and easy to digest. You can taste the obsessive attention to flour and leavening. You don't end your dinner feeling infinitely heavy, which is a miracle.
Outstanding ingredients: Forget the standard "cooked ham." Here you'll find Slow Food Presidia, exquisite cured meats, and pairings that will make you wonder, "How did they even think of that?" The combination of Apulian flavors and creativity is spot on.
The atmosphere: The place is refined without being pretentious. There's the warmth typical of someone who loves what they do. The staff is friendly, quick enough, and always ready to recommend the perfect pairing with a good glass of wine (or a craft beer).
My recommendation:
Definitely try their specialty pizzas, where the ingredients are added raw right out of the oven. That's when you realize the incredible quality of the ingredients.
In short: One of the best pizzerias in Brindisi, period. If you're in the area, it's a must-see.

Small but well-decorated.
The pizza was excellent, with a light dough and very good toppings, made with top-quality ingredients. I had a Brontese pizza, loaded with mortadella, fresh and fragrant.
The service was also excellent, quite fast, considering it was a Saturday night and there were also takeout customers.
I'll be back to try their other specialties.

The place isn't exactly downtown, but it's near a monument and on a fairly busy street. Closed only on Sundays, it's open the rest of the day, and on Saturdays it's best to book a table because it's very busy. It's not very big: you enter and have a view of the pizza chefs and the oven, while on the left is the cash register and, after a short corridor, the many tables. The menu is extensive, with a wide variety of pizzas, and unlike most pizzerias, there are many varieties of beer. Wine is available in every corner of the place.
The pizza is good, but the appetizers, including the platter and fried foods, aren't on the menu. The platter for two is enough for four people, and the fried foods are a decent size.

We had dinner LIKE ARGENTINIANS, drawn in by the menu that called to us with talk of ARGENTINE BEEF.
We didn't have a reservation, and they were very kind in giving us a table.
We ordered a mixed frittata and Argentine beef with arugula and granada.
The cooking and quality were excellent.
The complimentary olives are a plus...because we don't usually get anything complimentary...but they are SPICY...quite a bit...they could be milder to suit everyone's taste.
The PIZZA BREAD is the best thing that's happened to me in a long time...because we're having a bit of a crisis with Italian bread. (It's wrong to go back just for the bread, isn't it?)
Just kidding...WE WILL BE BACK FOR THE BREAD AND FOR EVERYTHING ELSE...! A GEM AWAY FROM THE PARKING MADNESS OF DOWNTOWN BRINDISI.
The Crema Catalana was very good...it could be a little less runny...but I'm nitpicking. The lady, the young woman, and the young man who serve the restaurant are absolutely wonderful. BRAVO!
The kitchen staff bringing out piping hot fries... I applaud them wholeheartedly... and THANK YOU FOR TREATING MY COUNTRY'S BEST INGREDIENTS SO WELL.

My first impression upon entering this restaurant was one of quality, from the decor to the music. Once I opened the menu, I was convinced. Kudos to the pizza chef, but also to the staff who run the dining room, dressed in casual yet sober and professional attire. Well done!!!!

As always, this place never disappoints. Excellent pizzas with quality ingredients, impeccable service, and prompt delivery. Reservations are recommended, but it's worth it.

The pizza was very authentic, with generous portions and great taste. A local Italian took me there, and it was truly excellent. The owners were also very kind and welcoming. Chinese tourists traveling in the area should definitely give it a try.
