The cabbage tart and pumpkin flan are delicious, the beef cheek is tender and flavorful, and the deconstructed tiramisu is spectacular—a truly beautiful idea, but above all, delicious to eat. Prompt and friendly service. Fair prices reflect the quality.

This time on a Saturday night, the restaurant was almost fully booked, yet the service was impeccable, the atmosphere intimate and refined, and the food sublime.
We were delighted to discover new culinary offerings and appreciate the new accolades received by this young team of professionals led by Chef Alessio.
It's truly a pleasure to be pampered by this small but highly original restaurant on the outskirts of Rome.
Congratulations, indeed!
10/10/2025: I was in Valmontone for work,
I had lunch at Specus and immediately felt at home.
Alessio and Flavia welcomed me as if we'd always known each other.
The atmosphere was clean and quiet, and the cuisine was authentic and delicious.
It will be a destination for three lunches and dinners.
