Naturally the 4 stars are to be compared to restaurants of the same level. It is therefore not imaginable to compare the 4 stars given with other restaurants I have reviewed. The environment is quite spartan, an outdoor veranda heated as much as possible with gas stoves and the idea of ​​providing throws, although nice for a pub, I don't find suitable for a restaurant of this level. Personally, I didn't really appreciate the lack of table linen, even if it's very clean, I don't find the idea of ​​eating on a bare table and placing cutlery on it pleasant. The service is always courteous and attentive, although even from a restaurant that boasts a Michelin star I would expect a little more. For example, I didn't appreciate the fact that at a table of 4 people it wasn't possible to have two different tastings but we were all forced to take the same things. The absolutely excellent raw materials, the impeccable technique and the scenic presentation. In my very personal opinion, the only complaint I would like to raise is linked to the dish entitled the hedgehog in its shell. From the title and presentation I had imagined an explosion of colors and flavors that would transport me to a sunny Sicilian rock. Instead, perhaps due to the small amount of curl present, perhaps due to the excessive potato foam, everything seemed a little flattened to me. But maybe this is just linked to my personal idea of ​​the dish

Uno dei miei menu stellati preferiti. Piatti particolari, sapori bilanciati, pietanze ben servite. Antipasti da sogno. Pesce ottimo, crudi buonissimi. Primo da rivedere. Dolci servici maestosamente. Porzioni molto ridotte, ma ti perdi nel percorso degustazione. Location nulla di particolare, ambiente non intimo, tavoli un po’ troppo ravvicinati. Ritornerei volentieri. Consiglio! Bravi!!
