We have been customers for a long time now and we have always left more than satisfied!! ...Daniele and Valentina are impeccable, precise and attentive in the dining room. Raffaele is top in the kitchen, always innovative and growing. The dishes are excellent...from appetizers to desserts. Always new dishes based on the season, the sea and land dishes are excellent!...the appetizer of fried artichokes and Manduria capocollo was top this time...my second course with fried cuttlefish and artichokes was excellent! Just the thought makes my mouth water...super finale with the chocolate mousse and hazelnut cream.

You simply feel at home, the place is very welcoming and comfortable, the furnishings are simple and tasteful and the completely open kitchen immediately catches the eye! With the possibility of eating on the specially created counter so you can observe while they prepare your dish!!! They are smart guys, nice and professional. The dishes speak for themselves where the kindness in offering even small tastes is an extra treat for those who sit down to eat. I give it full marks. This is a true example of young entrepreneurship and should be supported and rewarded. Compliments

I didn't like the typical Apulian first course very much, it was my fault that I didn't choose what I wanted... the Chianina steak.

Il locale di via Manzoni era più caratteristico sia per gli interni che per la zona vecchia della città. La nuova location ha una bella cucina a vista e mi fermo qui.
Ma veniamo all'aspetto principale ovvero l'arte culinaria.
Bene posso affermare che il locale ha mantenuto alcuni piatti di baccalà ma ha anche esteso l'uso di verdure e ortaggi locali e di legumi presidio slow food.
Il servizio ai tavoli è attento e senza sbavature.
I piatti hanno una costruzione verticale e si fa ampio uso di passati e creme.
I sapori non sono mai decisi, piccanti, speziati e sapidi.
Ho trovato ottime le frittelle di lampascioni ed anche il polpo su passato di ceci.
La carta dei vini rimane inadeguata per una cucina oramai matura e premiata.
Tornerò per nuove esperienze.

Terra Arsa, "Osteria Slow Food" restaurant, they propose a land, sea cuisine but above all a local cuisine. Here local products and Slow Food Presidia are the protagonists of km 0 menus. We choose different dishes to share. Between starters we choose "Mazzancolle scottate, vellutata di zucca e radicchio arrosto", "Carciofo cotto a bassa temperatura su fonduta di Parmigiano Reggiano 48 mesi e funghi cardoncelli" and "Frittella di lampascioni, vellutata di carote capocollo di Martina Franca(presidio slow food)e mosto cotto." The first one was my favourite. Among the first courses "Cavatelli, fagioli di Controne, cozze e gamberi rosa" and "Troccoletti, crema di broccoli, carciofi fritti e cacioricotta del Cilento (presidio Slow Food)". Among the main courses we choose fish "Baccalà al forno, favetta di Carpino e cicoria ripassata in padella" and "Polpo ai ferri, passatina di ceci, foglie miste e pomodoro infornato". But pay attention the menu changes every day according to products availability. I loved the dessert, I didn't share it. "Spuma chantilly con granita al mandarino". Not wide wine list but good selection and fair price. Kind and helpful staff. Recommended.
