Il locale è davvero suggestivo e molto elegante nell'arredo, ma al contempo l'atmosfera è familiare e accogliente. Le pietanze provate sono risultate superlative nella presentazione e nel gusto. Il filetto di maiale nero al sagrantino è eccezionale, così come i crostini al burro salato e alici; gustosissimi i dessert. Degno di nota anche il più semplice filetto di manzo olio e sale. Apprezzata l'offerta di un "assaggino" da parte dello chef e di buonissimi tozzetti in chiusura. Prezzi adeguati e più che meritati. Personale molto affabile (nota particolare per Riccardo).

25/02/2024: Inside the village of Collepino, between the green of nature and the pink of the stone there is the San Silvestro tavern ... a timeless place, with Niki's welcome and quality dishes you can't help but be enchanted. Agnolotti with artichoke ragout, grilled lamb and smoked scamorza with truffle. Recommended for taking a break from the daily frenzy and enjoying excellent Umbrian products.
07/01/2024: I returned after 20 years and I assure you that the mushrooms they offer are difficult to forget. Rustic style tavern located in an extremely characteristic village of a few souls. Kind owners and a very familiar environment. Anyone who visits Umbria and its beauties should stop in this tavern.

03/04/2024: Don't miss this typical Umbrian restaurant for the atmosphere of a true friends' cellar, especially if you dine at the long table at the entrance. Definitely try the snail skewers. The owner, Mr. Efisio, is a charismatic and very affable person.
