This is pear ice cream - not sorbet. It has little lumps of pear in it. I make ice-cream, I know its a faff, and fruit can be tricky. But this works really well.. The pear flavour comes through as combination of preserved pear and fresh pear, intense but smooth. I'm surprised, but this in now my favourite ice-cream. Also tried the pistachio and vanilla. All really top-rung. You want to spoil someone? This is the way to do it..

We have taken a trip from Umbria to Tuscany and by far it is the best artisanal ice cream I have ever tried. I ordered a cone with lemon-flavored ice cream and berries, the girl who served us was super nice and told us that they make them with a high percentage of fruit in this case. The result was surprising, I wish I could have this ice cream parlor close to home in Spain...
