14/03/2024: Well this is the first time that I have surveyed a place closed to the public (the place only opens in the evening) but I found myself in front of it as a traveler finds himself in front of a safe refuge. The owner of a unique and more than rare friendliness welcomed me very well and with a beautiful smile, an excellent entry ticket for advanced empathy and even his employee, a very intelligent and charming figure (as only a woman can be), had a beautiful energy that shone through so I will definitely return to visit them also because curiosity (and I am not curious but very curious, synonymous with modesty aside, intelligence and open-mindedness) to try their pasta (which I saw and immediately recognized in the weighing and perfect maturation and leavening) cooked in an electric oven and praised by the owner as truly up to par or equal to a traditional wood-fired oven and I like to try and experiment first and challenges secondly.....
