I must say that I had booked but without great expectations thinking of eating well but within the norm, but I must say that I was incredibly surprised by the goodness of the dishes and the perfect balance of flavors, perfectly balanced, acidity, flavor, sweetness, tradition and exoticism. Excellent dinner, the service also excellent and with touches such as amuse bouche and sweets for the coffee that pamper the customer. The place is elegant and clean. Go there as soon as possible.

Saturday night anniversary dinner, we arrived and immediately found a warm welcome. At the entrance they promptly made us take off our jackets to leave them in the cloakroom, and then let us sit at the table. We are therefore served with two excellent, very delicate Amuse-bouche, and then finish the chef's tastings with a dish based on sublimely prepared salmon trout, all accompanied by a rosé bubbles.
As appetizers we ordered a quail crusted with shortcrust pastry and stuffed. Served with its stock with green curry and a bergamot chutney with orange and lemon, and the veal with tuna sauce with Bonito del Norte in oil and Katsuobushi, roast sauce and mixed salad.
As first courses, the classic agnolotti of the Piedmontese tradition with three roasts, served with hazelnut butter and sausage ragout, for my girlfriend instead purple potato gnolotti stuffed with chicory, raisins and pine nuts, accompanied with a broth with 36 month old Parmigiano Reggiano and purple potato chips.
Before the desserts, the chef wanted to delight us with a single portion of panna cotta with mandarin compote and chestnut honey.
For desserts we had a chocolate dessert in 4 consistencies and 4 concentrations accompanied by a thorny olive sorbet and cayenne pepper jam. My girlfriend instead had a carrot-based dessert, in two consistencies. A warm cake, a carrot and ginger ice cream, all accompanied by zabajone with Moscato d'Asti.
Finally, with the coffee, the small pastry could not be missing which consisted of two gianduiotti, two baci di dama and two raspberry macarons.
The entire meal was accompanied by an excellent Grignolino from our Piedmont, under the recommendation of the maitre d'.
In addition to paying huge compliments to chef Gianni Spegis, with whom we had the honor of having a chat, for his simple but very tasty cuisine, delicate in every aspect, compliments go to the dining room staff, which was made up of only 3 people but there seemed to be at least 10 of them. Really kind, polite and friendly gentlemen, very knowledgeable about the dishes proposed by the chef, considering that all the dishes were finished by them at the table. Always available, every change of course they completely changed the place setting and always careful when pouring water and wine if they noticed empty glasses.
