IVANO: he thinks a hundred and he does a hundred! We have been his loyal customers for years and, if his pizza was already something superlative for us (particularly with the cereal and full-wholemeal dough), for some time now he has experimented with many others! We brought home the one you see in the photo (80% hydration, made with 0 flour, medium/low gluten content) and filled it to our taste! In the oven at 240° and in three minutes it was ready! It's not difficult to chew, the crumb is super soft and not at all chewy! The photo doesn't do it, but it's scary good! Congratulations Ivano... you always outdo yourself!

For me it has become a familiar place.. Ivo and Gessica are formidable. Every time I go to Friuli (often) I go to visit them to eat a really good pizza
